Paleo Lemon Poppyseed Muffins

Last weekend we were in a local cafe and Jared saw someone tucking into a big lemon poppyseed muffin. He looked at me… ‘You know what I could go for…
A very quick recipe, because it’s sitting way too far down on Instagram for you to scroll for it, and you all need these in your lives!
Melt together 1/3 cup coconut oil, 2T molasses, 4T sunbutter (or other nut butter but sunbutter gives it a great cookie taste.)
In a blender, pulse 2C oats and 1/2tsp salt until they’re mostly broken down but still coarse.
Add the melted mix into the oats and blend until combined then add 1/4C raisins,1/4 cup pecans, and pulse just a few times to incorporate them.
Press into a 1/2-3/4” thick rectangle and place in the freezer to harden up – about 15-20 mins.
While they freeze, melt together 3T coconut oil, 1tsp-1T honey/maple, pinch pink salt and 4-5T cocoa.
Pull the bars from the freezer, pour the chocolate over and let it set (it will set out of the freezer cos the bars are cold) then chop them up and dive in. (or return to the fridge/freezer to store!)
