Paleo Pecan Pie

For the crust:

2 1/2 -3 cups almond flour

1 tbsp coconut oil

1 egg

1/2 tsp cinnamon

1-2 tbsp raw honey

pinch salt

Mix everything together in a food processor, start with 2 1/2 cups and add in more nut meal until its a dough consistency that you can press into a pie dish with your fingers.

For the filling:

1 cup honey

2 tablespoons molasses

1/2 cup ground nuts

1 tsp vanilla

3 eggs

Pinch salt

1 1/2 cups toasted pecan pieces

Blend all but the pecans together and then fold in the pecan pieces and pour into the pie tin. Bake in a 350F oven for 35 mins or until the top is set but it is still slightly wobbly. These also work great for parties as a mini version, just grease a cupcake tray and press the pastry in there then fill it with the filling!
